Madfish Sauvignon Blanc Semillon from the Burch Family Wineries.

The racy, vibrant blend of this MadFish Sauvignon Blanc Semillon is the essence of everything good about Western Australia and our special coastal vineyards. Two great grapes harmoniously combined to produce a riotously fresh, fragrant and friendly wine. The pairing of these two famous grape varieties has, over time, evolved into the region’s signature white wine – nobody does it better!

Sauvignon is the star of the show. Upfront, fresh, lovely, highly aromatic, very showy. Semillon, on the other hand, is all about weight and viscosity, length and structure. The more reserved character, behind the scene, holding the show together.

A flood of intense fruits lift from the glass as guava, black currant and gooseberry mingle with custard apple, cantaloupe, sweet herbs and citrus zest. The palate offers bright and intense fruit flavours, a lovely lemon butter richness and a long refreshing citrus acidity to finish.

The 2017 season – It’s always important to start the growing season with plenty of moisture in the soil. The winter and spring of 2016 gave plenty of that. When it was time for summer holidays, BBQ’s and a glass SBS, you want nice warm weather – well so do the vines. In WA the summer of 2017 was mild for all, vines included. The knock on effect of the cool conditions was a really late start to the grape harvest due to this lack of warmth and sunshine.

The upside of cool conditions for both Sauvignon Blanc and Semillon is vibrant flavours and truly varietal notes. 

Enjoy now and over the next year with Persian fetta and smashed avocado sweet on char grilled sour dough or for something more sophisticated, tempura whiting served on a bed of wakame with a kewpie dipping sauce.

Some skin contact and a low temperature fermentation regime were adopted to enhance and preserve the finer fruit characters of these aromatic varieties. Western Australia

This state is a relatively small contributor to the country’s grape plantings. However it does not stop the state being responsible for some of the finest wines coming out of Australia. This region clearly has a turning point in its wine producing status. Research reports from Californian viticulturalist Professor Harold Olmo, in the 1950s, and the Western Australian scientist Dr John Gladstone, in the 1960s, indicated that the more southern cooler regions of Western Australia where very well suited for production of world quality wines. Now these regions: Margaret River, Great Southern and Pemberton are the major wine producing regions of Western Australia. Margaret River region is now one of the premium regions of Australia and regarded along with Coonawarra and Yarra Valley as one of the three premium Cabernet Sauvignon areas in Australia.
