Sometimes you’ve got to stick up for yourself… Fight for what is right in this world and uphold some good old fashioned values. Of course, one must always retain ones manners and obey the rules just ask the Pugilist. He’s powerful, thick-skinned but well-bred and with the manners and sense of fair play of a true gent.

Vintage Conditions
Returning to something approaching the historic norm, the 2017 vintage season was defined by a wet late winter followed by good flowering weather and then very mixed conditions throughout the growing period. This resulted in a late harvest. sometimes 4-6 weeks later than the precocious 2015. Quality was generally good though time spent in the vineyard as the difference between making good wine or great wine.
Winemaking
Precise varietal expression and balance are what we seek to achieve and so picking time is of utmost importance. We pick just as flavours are approaching their peak rather than let them get over-ripe. We retain whole berries in the ferment for vibrancy and we press relatively early to avoid astringent tannins.
Tasting
The nose shows an array of perfumed characters such as violets, oregano & thyme, along with glacé cherry aromas. Sweet ripe cherry fruit dominates the front palate which then develops into a more savoury wine, showing earthiness, toasted spices and lovely dried herb characters.

 The Pugilist Cabernet Sauvignon  is great with roast beef or grilled sirloin.

Franklin Tate Shiraz

The Shiraz grapes for this wine were picked at optimum ripeness and colour density. The wines were fermented with 10% portion of whole bunches to give a cherry-like lift to the fruit. Part way through the fermentation, some wine was run off to French barriques and the fermentation completed in this oak and later blended back into the majority parcel.

The wines shows lifted spice, vanilla, cocoa, sweet red fruits and hints of pepper on the nose. The palate is elegant and balanced showing creamy yet juicy mid-palate and soft tannins.

Allegory Riesling – Lovely lemon in colour, the MadFish Riesling holds lime zest, citrus blossom and green skin pear aromas. The flavours are citrus, apples and pears with a soft stone/ mineral acidity that keeps the flavours long lasting and fresh. We recommend pairing our MadFish Riesling with BBQ’d seafood on a warm summer evening. If it’s too cool to sit outside, then try it with citrus cured trout, tuna poke or fish tacos.

Allegory Riesling grows in the Great Southern wine region of Western Australia. This climate is called “continental” and is characterized by long cold winters, warm summers and not a lot of rainfall. Being away from the coast, the difference between the day time and night time temperature is greater than in a region closer to the coast. Riesling seems to like these conditions.

Winemakers say Riesling is tough to make because there is nowhere to hide. It’s just you and the grapes, no oak, no malo, no tricks…

When we make Riesling we strive to preserve and showcase clean, bright citrus and apple, fruit flavours. Sometimes the acidity can be a little high so leaving a bit of sugar at the end of the fermentation gives a nice drinking balance – not too sweet and not too sour – just right .

The family owned business started in 1986 with the label Howard Park, its roots deeply imbedded in the Great Southern region of Western Australia. Today Howard Park sources fruit for its iconic wines from family owned vineyards throughout Leston and Allingham vineyards in Margaret River, and Mt Barrow and Abercrombie vineyards in the Great Southern.

Jansz Premium NV Cuvée

Tasmania is renowned as Australia’s home of great sparkling wines. The fruit used in this Jansz Premium NV Cuvée is grown on selected, cool climate vineyards across Tasmania.
To maximize blending options and complexity in the final wine, batches are kept separate during winemaking. Secondary fermentation takes place in the bottle and is aged on yeast lees for as long as possible. The perfect balance for our Premium Cuvée is reached at just over two years.
Honeysuckle and citrus scents are immediately apparent with slight aromas of nougat, roasted nuts and a hint of strawberry from the Pinot Noir. A well-balanced palate of delicate fruits and creaminess fills the mouth with a lingering finish of citrus and nougat.

The Jansz Premium NV Cuvée is based upon Jansz wines of several vintages with specially selected and crafted individual batches from the cooler locations in South Australia, Tasmania and Victoria, with the largest regional parcels being Tasmanian. The matching of the crisp and fine flavours has resulted in a structured wine of medium body with zesty fruit characters.
