Maitre d’ Cabernet Sauvignon

This bright and lively wine is awash with notes of cherry, strawberry and blackcurrant, making this wine very approachable and expressive. The rich fruit flavours, coupled with the soft tannins adds to the wine’s complexity. A lingering aftertaste of intense fresh plum and spice finishes this wine off beautifully.

The grapes for The Mollydooker Maitre d’ Cabernet Sauvignon come from the sustainably grown Long Gully Road blocks, Ryans Road, Martins Road and Coppermine Road in McLaren Vale. Barrel fermented and matured in 89% American and 11% French oak using 37% new, 44% one year old and 18% two year old barrels.

From a new bottle of Mollydooker, pour some wine out into a glass and set it aside. Do the Mollydooker Shake on the rest of the wine in the bottle, and pour some into another glass. Then taste them side by side. The difference will amaze you!

Sarah says “Pre-shaken the wines are intense, concentrated and still magnificent. However, after the shake the wine becomes more approachable, the aromatics are lifted and the fruit is smoother on the palate. An overall more enjoyable and total Mollydooker experience!”

Don’t worry, the first glass you poured isn’t wasted. After a short time, it loses nitrogen, so you can enjoy it soon after. We call it pourer’s perks!

The Maitre D’ was named after Sparky, who put himself through winemaking college as a left handed Maitre D’.

The vineyards are situated on the magical Seaview Ridge, which with its ancient soils and Mediterranean climate, is home to some of the most iconic Australian wines. We have three separate vineyards – Long Gully Road, Coppermine Road and the Home Blocks, giving us a total of 114 acres of Shiraz, Cabernet and Merlot. All of our grapes are grown sustainably

Mollydooker

Sarah & Sparky Marquis have built their latest brand, ‘Mollydooker’, after ten years working on other projects. These wines come from some of the best grape growing regions, McLaren Vale, Langhorne Creek & Padthaway in South Australia. The grapes arebhand selected their finest vineyards and these wines are a true testament to their commitment to excellence in the winery and our vineyard program. The award-winning wines from Mollydooker include Carnival of Love, Enchanted Path and The Boxer. There are several other tremendous wines in the portfolio. 

The wines are very distinctive and made in the unique Mollydooker Fashion. Full of flavour and body and aerated in the unique fashion of the Mollydooker shake.

The business is family owned and is now run by Sarah with the help of her children.

Mollydooker Wines is an exciting, out of left field winery in the heart of McLaren Vale, South Australia. The vineyards are situated on the magical Seaview Ridge which, with its ancient soils and Mediterranean climate, is home to some of the most iconic Australian wines. South Australia

The McLaren Vale is predominately a red wine region, producing some of the best red wines in South Australia. Vineyards were first planted in the mid 1800s. One of the early pioneers Thomas Hardy established a business that evolved to BRL Hardy, one of the largest wine companies in the country. The region also has a healthy number of boutique wineries that consistently make fine wines and experiment with different wine styles. The climate is warm to hot with dry summers, and benefits from cooling breezes from the St Vincent Gulf. The main wine styles: Red – Shiraz (rich, ripe & generous), Cabernet Sauvignon; White – Chardonnay, Sauvignon Blanc.

Cabernet Sauvignon

Probably the world’s most famous red grape variety. Originated from Bordeaux and has been present in Australia since 1832.

Wherever it has been planted the resulting wine has developed its own identity yet it is always recognisable. Although it will vary in intensity the aroma will always be dominated by berry characteristics in the classic wines and the tannins will be firm or textured and soften with age. Cabernet Sauvignon is high in acid and tannin and remains fresh for many years. It can be earthy and display strong blackcurrant flavours. The naturally high tannin and inherent complexity mean all Cabernet Sauvignons will improve with age.

Coonawarra, with its prized ‘terra rossa’ soils, Margaret River, Mount Barker (Great Southern) and Yarra Valley regions are considered the premium Cabernet Sauvignon areas in Australia.
