Bird in Hand Riesling
The Bird in Hand signature range is a limited release of premium quality wines created from the
best parcels of fruit from every vintage.
All fruit is sourced from areas ideally suited with a cooler climate for producing premium quality Sauvignon Blanc.
The Bird in Hand Riesling marks our foray into one of Australia’s most coveted cool climate regions for super premium wines – Tasmania. Our 2023 Riesling is a blend of carefully chosen parcels from Tasmania’s Tamar Valley and South Australia’s world-renowned Clare Valley.
All parcels are kept separate from picking to blending and are meticulously handled in the winery; handpicked then refrigerated overnight prior to hand sorting. The fruit was then delicately whole bunch pressed, which is the gentlest way to extract the juice from the berries.
A long, cool fermentation is key in Riesling production. Temperatures are maintained at 14-16 degrees, with the fermentation lasting 13 days. The wine was then left on light lees for 6 weeks and with light fining prior to bottling. The final blend consists of 80% Adelaide Hills and 20% Tasmania.
In the glass, the wine exhibits a pale straw colour with brilliant clarity and subtle green hues, hinting at its youth and freshness.
The nose is immediately enticing, offering a bouquet of vibrant citrus notes, particularly lime and lemon zest. Delicate floral aromas reminiscent of jasmine and orange blossom. Subtle hints of green apple and white peach
The wine is crisp and refreshing with a laser-like acidity that provides excellent structure. The flavour profile showcases zesty citrus fruits, dominated by lime and grapefruit. Crunchy green apple and pear along with a touch of honey and wet slate. The balance between fruit ripeness and acidity is exceptional, creating a harmonious and invigorating mouthfeel.
Pairing well with delicate fish and light Asian dishes, the Riesling is a good match to spaghetti vongole or fragrant Vietnamese chicken salad.
