Kirrihill Regional Series Cabernet Sauvignon – This 2019 Cabernet is a showstopper. Dark red fruits and plum aromas flirt with delicate mixed herbs and spice notes. Elegant yet generous with balanced oak flavours and fine-grained tannins.

Vintage conditions

2019 was a challenging growing season due to the drier than average winter and spring. Careful and diligent irrigation scheduling and vineyard management was required to ensure that full leaf canopies protected the fruit from the heat experienced during summer. Working with loyal, specialist Clare growers, this Cabernet is a blend of multiple vineyards throughout the Valley..

Vinification details

Select Cabernet parcels were fermented into small batches from several vineyards for 8 to 10 days. A long, cool ferment ensured that maximum vibrancy and freshness was maintained in the wine. The Cabernet was then pressed into stainless steel tanks to complete secondary malolactic fermentation, followed by maturation in tanks, with a small percentage seeing some French and American oak. A light fining was done to enhance palate softness and then bottled with minimal filtration.

Founded in 1998 by long-time friends and locals, Sean Edwards and Rob Stanway, the focus at Kirrihill is on the pursuit of growing the best quality fruit possible, whilst managing the vineyards sustainably and respecting the individual sites. The micro-climates within the three small valleys that make up the Clare Valley region provide their winemakers with a diversity of fruit selections to produce expressive wines of purity and intrigue, particularly aromatic Rieslings, which speak profoundly of their place.

Sitting atop the ‘Golden Mile’, a stretch of rare terra rossa soil, their highly prized Schobers Vineyard is one of the most distinguished red wine producing vineyards in Australia. Contour planted on rolling hills at the southern tip of Clare Valley, Schobers Vineyard has consistently produced Shiraz and Cabernet Sauvignon wines of great complexity, which are rich in concentration with distinctive Clare Valley character.

Kirrihill Winery

South Australia

Vineyards were first established in the mid 1800s. Some of the early winery names, Wendouree, Knappstein and Quelltaler are still in the region. Nowadays there is a mix of very large companies and a significant number of boutique wineries. The climate is regarded as warm, but there are variations due to altitude. The main wine styles: White – Riesling, Semillon, Chardonnay; Red – Shiraz, Cabernet Sauvignon.

Cabernet Sauvignon

Probably the world’s most famous red grape variety. Originated from Bordeaux and has been present in Australia since 1832.

Wherever it has been planted the resulting wine has developed its own identity yet it is always recognisable. Although it will vary in intensity the aroma will always be dominated by berry characteristics in the classic wines and the tannins will be firm or textured and soften with age. Cabernet Sauvignon is high in acid and tannin and remains fresh for many years. It can be earthy and display strong blackcurrant flavours. The naturally high tannin and inherent complexity mean all Cabernet Sauvignons will improve with age.

Coonawarra, with its prized ‘terra rossa’ soils, Margaret River, Mount Barker (Great Southern) and Yarra Valley regions are considered the premium Cabernet Sauvignon areas in Australia.
