Gundog Estate Hunter’s Semillon – The intention with this wine is to deliver a modern style of Hunter Semillon which offers outstanding early drinking appeal in combination with an ability to age if you can keep it that long. Relative to The Chase Semillon, we are sourcing fruit from blocks on heavier soils, offering bolder flavours and more structure. The principle sources being the dry-grown Vernon Vineyard in Mount View, and the 69’ and 89’ blocks of Semillon at the Somerset Vineyard. Ripeness levels from these vineyards / blocks are consistently higher (by around 0.5 Baume) than those servicing The Chase Semillon.e over the short to medium term. The frame is still fine, but the flavours are more generous.

Gundog Estate is a boutique producer of premium Semillon and Shiraz.
Sourcing fruit from some of the best vineyards in the Hunter, Hilltops and Canberra wine regions in New South Wales, they engage passionate growers that work tirelessly to deliver the best fruit possible. The growers also firmly believe in sustainable vineyard practices with a view to leaving the land in a better condition for the next generation.
In the winery, they employ a thoughtful combination of new and old world practices to deliver high quality, innovative wines. These wines represent some of the best examples of regional, modern Australian style, produced on a boutique scale. Fermentation with naturally occurring yeast, and partial fermentation of whites on skins, are two key practices we have implemented to great effect. With the reds, fermentation in open tanks, hand plunging, and shorter maturation periods in premium French oak puncheons illustrate a combined traditional / modern approach to winemaking that helps them to deliver wines that strike a fine balance between fruit flavour and complexity. Ultimately, they seek to produce quality wines that tell a story of the season and region. The wines should offer drinking appeal from day one, but also have the potential age gracefully.

Gundog Estate is a boutique wine producer owned and operated by the Burton family. Our passion for high quality, regionally distinct wine has inspired us to pursue two of Australia’s most unique and highly acclaimed wine styles; Hunter Valley Semillon, and Canberra Shiraz.
Winemaker, Matt Burton (2010 Hunter Valley Rising Star of the Year) is passionate about single vineyard wines, regional expression and premium grape varietals. He believes well made wine should clearly reflect where the fruit is grown, and tell a story about the particular vineyard and season. He is driven to produce wines that are true to the terroir.
The unique range of wine is unlike any offering from other Australian wine producers. The decision to focus on contrasting varieties, climates and regions will challenge and delight any serious wine lover. This diversity in style, and our determination to produce some of Australia’s finest Semillon and Shiraz, will cement our reputation as one of Australia’s most dynamic and exciting new wine producers

New South Wales

The Hunter Region is the premium wine region of New South Wales and one of Australia’s most well-known, and historically important wine regions. Distinctive styles of Semillon, Chardonnay and Shiraz are the hallmark of this region. James Busby the man credited with bringing the vine to Australia was associated with the Hunter Valley through his brother-in-law William Kelman. Kelman is thought to be the first to plant vines in the Hunter. George Wyndham planted grapes in 1832. Penfolds bought the property in 1904 naming it Wyndham Estate. Dr Henry Lindeman purchased land around Raymond Terrace in the 1830s. So too did James King whose legacy passed onto Maurice O’Shea who came to the forefront of Hunter Valley winemaking in the 1920s. The area fell into depression for many years, but gradually made a comeback in the early 1960s. Today the region is booming. The climate is regarded as warm to hot. The main wine styles: White – Semillon (regarded as one Australia’s greatest and unique wines, with great aging potential), Chardonnay; Red – Shiraz.
