Jester Cabernet is Mitolo`s `baby` Serpico using 20% Amarone technique of dried Cabernet fruit adding complexity, roundness and fullness to the mid palate.

Producer: Colour: RedGrape: AustralianRegion: South Australia, McLaren ValeAlcohol: 14.6%Vintage: 2015/6Flavours: , , , , , , , , , , , , , Grape Details: Cabernet SauvignonVinification: 20% of the grapes were left to dry on the 10kg drying racks for 8 weeks in the traditional Amarone manner to concentrate flavour. The fruit for Jester is fermented on skins for 5 to 6 days at a cool temperature to enhance the pure berry fruit. The wine is then pressed and undergoes partial barrel fermentation. A natural malolactic fermentation is completed before the wine is racked. Aged in 2-4 year old French oak for 9 months.Cellaring: Will age reliably under screwcap for 4-6 yearsTasting: Lifted peppery spice leads into an herbaceous mix of blackberries, currants and cloves. The partial Amarone method produces hints of liquorice, tar and leather whilst remaining fresh and vibrant. The youthful tannin structure will evolve over the next few years to become soft, supple and smooth.SKU: MITOL02

Frank Mitolo’s partner is winemaker Ben Glaetzer, who was recently awarded the 2004 Qantas Medal for Young Australian Winemaker of the Year. Ben is obsessed with quality. ‘We pick all the grapes into small bins, pick on flavour rather than analysis and use about 80% French oak.’”

South Australia

The McLaren Vale is predominately a red wine region, producing some of the best red wines in South Australia. Vineyards were first planted in the mid 1800s. One of the early pioneers Thomas Hardy established a business that evolved to BRL Hardy, one of the largest wine companies in the country. The region also has a healthy number of boutique wineries that consistently make fine wines and experiment with different wine styles. The climate is warm to hot with dry summers, and benefits from cooling breezes from the St Vincent Gulf. The main wine styles: Red – Shiraz (rich, ripe & generous), Cabernet Sauvignon; White – Chardonnay, Sauvignon Blanc.
