The Hedonist Organic Cabernet Sauvignon

BOUQUET Blackcurrant, a touch of tomato vine and a tantalising hint of black truffle.
PALATE An abundance of blackcurrant carries through to the palate, some earthy tones and tight tannins wrap this little package up nicely.
The fruit for the Hedonist Cabernet is grown biodynamically on our own vineyard situated in the Willunga foothills, McLaren Vale. Warm Summer days are cooled by evening sea breezes from St Vincent’s Gulf, which lies a close proximity to the West. The soil is rich loam over clay with patches of underlying limestone, giving the wine a rich and fullness of pallet.
Harvested in two batches on the 24th February, the parcels were fermented separately – for 8 days and 14 days respectively. Once malolactic fermentation was completed in stainless steel tanks, the batches were racked into 20% new French Oak; 40% seasoned French Oak, 40% seasoned American Oak for 18 months for maturation.

In keeping with our holistic philosophies, the vineyard is managed with the absence of pesticides and herbicides. Undervine slashing and mid-row cover-cropping are methods utilized for weed control. All the wines reflect a purity which is consistent with the Winemakers and their philosophies.
A dynamic trio – the winemaking team consists of Walter Clappis, a veteran winemaker of 36 vintages, daughter, Kimberly and her partner James Cooter. Walter’s experience and wisdom plus the energy and enthusiasm of the new generation, has created the perfect balance in the winery. The McLaren Vale is predominately a red wine region, producing some of the best red wines in South Australia. Vineyards were first planted in the mid 1800s. One of the early pioneers Thomas Hardy established a business that evolved to BRL Hardy, one of the largest wine companies in the country. The region also has a healthy number of boutique wineries that consistently make fine wines and experiment with different wine styles. The climate is warm to hot with dry summers, and benefits from cooling breezes from the St Vincent Gulf. The main wine styles: Red – Shiraz (rich, ripe & generous), Cabernet Sauvignon; White – Chardonnay, Sauvignon Blanc.
Probably the world’s most famous red grape variety. Originated from Bordeaux and has been present in Australia since 1832.
Wherever it has been planted the resulting wine has developed its own identity yet it is always recognisable. Although it will vary in intensity the aroma will always be dominated by berry characteristics in the classic wines and the tannins will be firm or textured and soften with age. Cabernet Sauvignon is high in acid and tannin and remains fresh for many years. It can be earthy and display strong blackcurrant flavours. The naturally high tannin and inherent complexity mean all Cabernet Sauvignons will improve with age.
Coonawarra, with its prized ‘terra rossa’ soils, Margaret River, Mount Barker (Great Southern) and Yarra Valley regions are considered the premium Cabernet Sauvignon areas in Australia.
