Yalumba has been developing its own sustainable viticulture program since the mid 1990s. This starts in the vineyard and extends to every aspect of winemaking, production, packaging and distribution. Many awards and milestones have resulted due to sustainability now being at our core. All Yalumba wines were announced vegetarian and vegan friendly as of 2011. Yalumba is the first wine company in the world to receive the Climate Protection Award from the US Environmental Protection Agency, 2007. These benefits are most obvious in your wine glass.
“Apart from economic viability and social equity, for us, sustainability is about biodiversity in our vineyards,” says Winemaker Louisa Rose. “To encourage it, we’ve done a number of things: we’ve reduced the amount of chemicals we use, incorporated an integrated pest management system, and encouraged biodiversity of vegetation in our vineyards”. NV BRUT Winemaking The grapes were picked during the cool of the night, the fruit was de-stemmed and pumped into the press. Only the best quality of free run juice was taken off; then clarified before adding yeast. The fermentation was carried out at a cool temperature to maintain the fruit flavours. After fermentation the base wine was allowed to rest on yeast lees for 6 months before undergoing a second fermentation to produce the fine bubbles. The Wine Light green straw in colour with a fine persistant bead showing lifted aromas of citrus and apple. Tasting soft and refreshing with light creaminess and balance.

Trentham Estate is proud to announce its continued commitment to water conservation and wetland restoration, through a new partnership with the Murray Darling Wetlands Working Group Ltd.

Trentham Estate has long strived to provide support to localised Murray Darling research activities for sustainable water supply, quality and capacity. With the recent closure of the Lower Basin Laboratory in Mildura, it has looked to another respected organisation to support during a time of much strain on the local environment. For over 20 years, the Murray Darling Wetlands Working Group Ltd has worked on wetlands throughout the Murray-Darling Basin, restoring and improving the management of wetlands throughout the catchment, of the Murray-Darling Basin.

Trentham Estate’s River Retreat label, now vegan friendly, will proudly continue Trentham’s dedication to corporate responsibility – whereby every bottle purchased of River Retreat wine will result in a donation towards the Murray Darling Wetlands Working Group.

With many great projects currently underway in the far-west region of NSW, the Murray Darling Wetlands Working Group will benefit greatly from these ongoing funds.

Yalumba Antique Muscat NV

Luscious and intense, this gloriously indulgent dessert wine is made from Muscat grapes that are picked late for sweetness and aged in barrels for up to 10 years

WINEMAKING / VITICULTURE Made predominantly from the brown, red and black sports of the Muscat Blanc à Petits Grains grape. Briefly fermented on skins to soften and release the flavours from the shrivelled and partially raisined berries. After draining and pressing, the fermentation is arrested by fortification with neutral grape spirit to retain the varietal flavours and liqueur sweetness in the wine. The vintage wines are then put into small oak barrels to mature, producing complex wines with raisin and fruitcake flavours. After many years of maturation, a selection of older and younger wines are judiciously blended to produce a complex and balanced wine displaying fruit and aged characters. The base blend, from which the Antique Muscat is bottled, is regularly re-blended to perpetuate the consistency and complexity of this classic style from year to year.
TASTING COMMENTS This luscious dessert wine is deep amber to tawny in colour with olive green hues. The wine exhibits classic perfumed aromas of the Muscat grape – lifted florals of rose petal, ginger spice and orange peel, with butterscotch and fruitcake. The palate is soft, silken and luscious in texture, quite viscous and concentrated, then richly flavoured showing a melange of raisined fruit, wood aged characters, fruitcake and spices, finishing with delicate and integrated spirit. This is an indulgent and seamless wine. Serve with blue cheese, crème brûlée or pecan pie and a dollop of triple cream. Can be served chilled, refrigerate after opening to maintain freshness.

Tyrrell’s Hunter Valley Chardonnay

The grapes for our Hunter Valley Chardonnay were sourced from a number of sites across the Pokolbin area, each of which has a slightly different microclimate and so brings its own unique personality to the blend.  A cool summer then gave us even, stress-free ripening with some heat around Australia Day that was perfectly timed at the final stages of ripening. With an early budburst and later than normal harvesting, the fruit had a longer than normal hang time, which meant that all of the fruit had wonderful flavours balanced by a high natural acidity. The grapes were both hand and machine picked before gentle pressing and fermentation. After cold settling for two days, the juice began fermentation in stainless steel tanks before being transferred and matured in new and older French oak barriques. After oak maturation, the wine spent an extended time on lees in stainless steel for an additional nine months to build texture and mouthfeel. A method used extensively in Burgundian winemaking.

Textbook modern, medium-bodied Hunter Valley Chardonnay to be enjoyed with a variety of cuisines. The nose shows a great mixture of citrus, white stone fruit, some oak spice as well as just a hint of solids complexity. The palate is medium bodied, with a lively fruit intensity and texture through the mid-palate, with a refreshing acid profile.

Keith Tulloch Semillon

Keith Tulloch Semillon – Bright and lifted aromas of lemon and lime on the nose – hallmarks of this low-yielding vineyard. this Semillon has very delicate mouth-feel and litheness, yet shows astoundingly bright lime-fruit and green-melon presence and persistence. The acidity is totally balanced, giving sustaining juicy vigour and fine structure.

Keith Tulloch Semillon is a classic Semillon pure and fine, with bright green straw colour highlights. Aromas are zesty and intense, brimming with lemonade, lemongrass, ripe lime and soft orange grapefruit. Delicate floral hints of green-clover flower build nuanced complexity. The flavours are precise and detailed, showing primary juicy lemon brightness with satiny length, finishing with a slight pithy tang and crunchy, energetically fresh persistence.
There is a great cellaring future ahead. Beautiful harmony will begin to develop within 1-2 years, while 5 to 10 years will elevate this regal youngster into a classic Hunter Semillon.
Drink: Now to 2028.
Food Match: Fresh oysters, and prawns.
