Chapel Hill Verdelho

Chapel Hill Verdelho – Australia is now said to produce some of the world’s better examples of this variety. This example has appetizing, distinctive aromatics of lime, lemongrass and herbs lead into a refreshing, medium-bodied palate with a dry, crisp structure and a soft, smooth finish.

Only the free run and gentle pressing juice fractions were utilised for this wine. No fining agents were used.

Chapel Hill Winery in McLaren Vale was built on the site of the Seaview Chapel and school house. The 1865 ironstone Chapel still proudly stands today and is an integral feature of the tasting room. Planting of the vineyard commenced in 1972 and the first vintage was in 1975. Perched on the edge of the spectacular Onkaparinga Gorge, shallow rocky soils are a feature with sweeping views back over McLaren Vale and Gulf St Vincent.

White winemaking is about instinctive vineyard management and carefully monitoring the ripening process to ensure that we retain and showcase the delicious fruit flavours in the finished wines.
The white winemaking commences with slow and gentle pressing to separate the juice from the skins and seeds. The free run juice and very gentle pressing portions are combined and separated from the remaining pressing fraction. Only the free run component is used in our white winemaking as it is aromatic and delicate, with more vibrant acidity.
The free run is cold settled, allowing the juice to clarify naturally, preserving the precious aromatics and freshness. This juice is then inoculated with neutral yeasts, selected to respect the site and varietal characteristics.
When the ferment is completed, the wine continues to be stored on yeast lees, which encourages additional mouthfeel and texture.
Once the white wines have matured they are sent to bottle with only minimal additions and without the use of any fining agents. As a result of this winemaking, all of our white wines, with the exception of the Pinot Grigio, are suitable for vegans.

The Exhibitionist Merlot

The Exhibitionist Merlot is a part of the classic Character Series wines.

The Exhibitionist Merlot, Barossa Valley 2019
Once in a while you meet someone larger than life itself. Someone who has no fear and is not afraid to let you know just how great they think they are. Someone that, really deep down and against your better judgement, you can’t help but admire. You’re dealing with The Exhibitionist.

Viticulture
The Barossa Valley is rightly famed for its red wine production. On the Southern reaches of the region, the climate has more similarities with the Adelaide Hills than the valley floor. Here, varieties such as Merlot thrive in the slightly cooler temperatures. Planted on rich red loams with quartz and ironstone nuggets dotted amongst the vines which lend a structure and minerality to the wines produced.
Winemaking
Precise varietal expression and balance are what we seek to achieve and so picking time is of utmost importance. We pick just as flavours are approaching their peak rather than let them get over-ripe. We retain whole berries in the ferment for vibrancy and we press relatively early to avoid astringent tannins.
Tasting
The Exhibitionist is full of rich plum and damson fruit on the nose. Oak used is unobtrusive on the palate which is dominated by rich red berry flavours while also presenting subtle earthy nuances. The wine is elegant and silky with a long finish.

d'Arenberg Vintage Fortified Shiraz

d'Arenberg Vintage Fortified Shiraz 50cl

d’Arenberg Vintage Fortified Shiraz, another classic from this famous Australian producer.

From the first declared vintage in 1928, their fortified wines have been Shiraz based, and the vines that produced the original vintage still provide the grapes for this wine. These old vines are stumpy, gnarled and deep rooted, distinguished by their small bunches of highly coloured and intensely flavoured grapes.

2008 is a tale of two vintages for red wines in McLaren Vale. Winter rain ensured the soil reached filled capacity and set the vines up perfectly with healthy balanced canopies. A normal spring and an unseasonably cool January and February meant most vines remained stress free and for early picked parcels flavour ripeness was achieved at reasonably low sugar levels and high natural acidity. However, a sustained heat wave in early March forced frantic picking and resulted in rich ripe characters.

Generosity is the theme of this wine. The aromatic nose is a gift of chocolate, fresh pipe tobacco, and Christmas pudding, with fresh violets lingering in the background together with an array of spices, from nutmeg and cinnamon, to cloves and ginger. This wine has been fortified with high quality brandy spirit during the natural fermentation process. This has captured the beautiful character of the fermenting grapes. The palate is packed with intense flavours of plummy sweet fruit, figs, nuts, dried apricot, and exotic lively spice. Natural acidity has been retained and provides a structure on which the generous fruit body of this wine can sit. Chewy grape tannins carry this generosity through on a long and warm finish.

d’Arenberg Vintage Fortified Shiraz from McLaren Vale, a great example of this typically aussie style of wine.

Keith Tulloch Chardonnay

Keith Tulloch Chardonnay – This is a tight, bright, focused wine with a finer nucleus of fruit than usual, and this texture, balance and fine oak will therefore take longer in the bottle to integrate and develop. These characters open out with breathing to reveal the typical barrel ferment funkiness – peach, melon and passionfruit plus hints of smoky vanilla oak – combining in a harmonious Burgundy-like balance.

Keith Tulloch Chardonnay has a fine bright colour showing exceptional green hue and freshness. Aromatically, the notes are vibrant with great fruit drive, white fig perfumes mix with nectarine, pineapple and yellow melon. Beautiful elements of deluxe French oak support and deepen the bouquet, with delicate vanilla spiciness adding warmth and softness.
The palate glides with the wonderful harmony of primary and malolactic barrel fermentation; the mouth feel is yoghurt-like and glossy, with superb texture and persistence. Melon and fig flavours predominate, yet nectarine and pineapple brightness provides lift and focus onto a long finish.
Drink: Delicious now to 2026.
Food Match: Shellfish, poultry dishes, and soft cheeses.
Technical Data
Alcohol: 13.0%
pH: 3.26

Franklin Tate Cabernet Merlot

Franklin Tate Cabernet Merlot

These Bordeaux varieties were processed individually with a portion fermented in open fermenters at temperatures up to 28°C. Control of tannin extraction and flavour preservation, were integral in the fermentation. Wine was pressed to Bordeaux style French oak, to complete malolactic fermentation. The wine was blended from its components after maturation. The Merlot adds plush fruit and leafy characters as well as providing juicy acidity, in contrast to the Cabernet Sauvignon’s structured, but ripe tannin profile.
