Once in a while you meet someone larger than life itself. Someone who has no fear and is not afraid to let you know just how great they think they are. Someone that, really deep down and against your better judgement, you can’t help but admire. You’re dealing with The Exhibitionist.

Viticulture
The Barossa Valley is rightly famed for its red wine production. On the Southern reaches of the region, the climate has more similarities with the Adelaide Hills than the valley floor. Here, varieties such as Merlot thrive in the slightly cooler temperatures. Planted on rich red loams with quartz and ironstone nuggets dotted amongst the vines which lend a structure and minerality to the wines produced.
Winemaking
Precise varietal expression and balance are what we seek to achieve and so picking time is of utmost importance. We pick just as flavours are approaching their peak rather than let them get over-ripe. We retain whole berries in the ferment for vibrancy and we press relatively early to avoid astringent tannins.
Tasting
The Exhibitionist is full of rich plum and damson fruit on the nose. Oak used is unobtrusive on the palate which is dominated by rich red berry flavours while also presenting subtle earthy nuances. The wine is elegant and silky with a long finish.

The Courtesan Riesling is one of the Character Series wines from Wild and Wilder

The  Character Series has a range of beautifully produced and packaged wines, benefitting from ultra premium quality fruit. Each wine has great varietal definition coupled with our signature vibrancy and freshness. These are wines that are immediately pleasing, yet an authentic expression of the variety and place.

The Courtesan is the epitome of good breeding. Wonderful posture, a delicacy of frame and a fragrance to haunt the most sated of olfactory functions. Behind closed doors though, the Courtesan shocks with its racy charms, flirting outrageously with “come-drink-me” eyes. Don’t be fooled, The Courtesan means business.

Winemaking
Vinification, as one might expect with good fruit, is very simple. The grapes are picked in the cool of the morning and rapidly transported to the winery where they are lightly crushed and sent to press. For the Courtesan, we retain only the purest, free-run juice. The wine is fermented at a cool temperature to retain fruit profile and the finished wine is aged on its lees for 2-3 months before bottling.

Capturing all the mouthwatering lime and elderflower character one expects from great Riesling, the Courtesan has a voluptuous palate hinting at grapefruit, ripe melon and quince.

Suitable for both Vegetarians and Vegans,

A vibrant nose of ripe red cherry, cranberry, black fruit, aromatic smoke, vanilla, violets and treacle lead to a concentrated palate of cranberry and sour cherries, with more savoury flavours of black tapenade, herbs and a hint of tobacco. A precise and astute wine with plenty of interest.

FERMENTED SEPARATELY AND BLENDED POST FERMENTATION.

LAMB WITH MINT SAUCE. IT TASTES WAY BETTER THAN IT SOUNDS. I
SUGGEST NOT TO MAKE A SMOOTHIE WITH THOSE INGREDIENTS.

Cloud Cuckoo Land is an imaginary state of absurd over optimism – something that we at Wild & Wilder are often accused of. Indeed, not so long ago, if we’d said that we wanted to make high quality, low intervention wines made from Mediterranean varieties in the Riverland, Cloud Cuckoo land is exactly where people would have said that we lived! But, we believe that anything is possible if you don’t see the obstacles, you challenge the “received wisdom” and resist the naysayers. Cloud Cuckoo Land White is for everyone who feels the same.
Vintage Conditions
Right across South Australia, the 2019 vintage will be remembered as a very challenging one. Very dry conditions persisted throughout the growing season while some areas also had to contend with frost, hail and wind – all of which reduced the crop but helped increase concentration and quality.
Winemaking
Hand-picked before gentle de-stemming and crushing. Greco & Zibibbo were held on skins for 24 hours. Cool fermented separately followed by maturation on lees.
Tasting
A vibrant, textural white with hints of almond blossom, quince and ripe pear. Tangy, almost exotic but pithy and delicious.

The On the Grapevine range is an innovative retro-inspired range when life was simple, products had an ingrained quality and people sought the better things in life. This Shiraz is no exception, a flavoursome wine of black cherry and raspberry balanced with subtle tannins that make it the perfect complement to BBQ meats or cheese.

On The Grapevine Shiraz combines the intense dark fruit aromas of plum and forest berries, with hints of spice and vanilla. On the palate it is rich and smooth, with lashes of dense ripe fruit and soft tannins. Additionally, barrel maturation in premium American and French oak adds further character to this full bodied Shiraz.

Perfect with barbecued meals, rich dishes, cheese platters and dark chocolate.
